Rice Pudding
Ingredients
- 1 1/2 cups instant white rice
- 1/4 cup margarine (at room temperature)
- 3 egg whites
- 2 cups skim milk
- 1/2 cup DiabetiSweet
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- ground cinnamon
Instructions
Cook the white rice following
directions on the box. Preheat oven to 325F. Combine
cooked rice, egg whites, skim milk, DiabetiSweet, salt,
and vanilla extract in a large bowl. Mix well. Pour
mixture into a glass baking dish (9”x7”).
Sprinkle top with ground cinnamon. Bake for approximately
1 hour (until an inserted knife comes out clean).
Makes 6 servings with each serving counting as 2 starch
exchanges.
